Roast chicken salad

A better day today, thankfully.

It hasn’t been as hot, although warm enough to keep mum in complaint-fodder, so mum has been calmer and less fretful. Her main problem has been an inability to remember when Lady Friday is due to arrive, which has caused her to become rather frustrated with herself.

This afternoon our groceries arrived, minus a number of important items such as mum’s coffee ice cream and her favourite dark chocolate ginger biscuits. They did supply an alternative to the ice cream, in the form of Haagen Dazs tiramisu flavour ice cream. I kept one tub to see if mum likes it (or is even willing to try it), which should be an interesting experiment.

I extracted everything from the crates they were delivered in, watched with polite interest by mum and the delivery driver – although, to be fair, the driver offered to hold each crate when he realised how long it would take me to empty the crates one-handed, using the other to hold onto the counter. Then I had to put everything away, and once again hit the problem that our new fridge, despite having a larger capacity than the old one, holds far less.

The weekly struggle to fit in a week’s worth of groceries is causing me to develop an irrational hatred of fridges.

This evening I did something that was a regular summer meal in my childhood: rotisserie chicken with salad. The childhood chicken was from a real rotisserie, which appeared outside the butcher’s shop every summer. I haven’t thought of that thing in maybe 30 years, but I can still picture the galvanised steel box containing a dozen chickens slowly spinning their way to golden tastiness. Dad would pick one up on his way home from work and it would be served, still warm, with salad, potato salad, and coleslaw.

Tonight’s chicken was from Tesco, and needed to be cooked before eating. Serving it tonight meant I didn’t need to find room for it in the fridge, although I neglected to realise that the cooked chicken would need fridge space. 🤦‍♂️

That’s an issue for later, though. For now (or, I guess, for then? I’m confusing myself now) it was enough that mum ate her chicken and salad, then had a chocolate éclair with some strawberry cheesecake. (Which I ‘accidentally’ forgot to put in the freezer. Silly me. 🤭) I had the rest of the cheesecake, because there’s no room for it in the fridge with all that chicken. Well, what’s a person to do? 🤷‍♂️

Tomorrow Lady Friday will be here, and I might need to ask her to take mum down to the pharmacy as 12 phone calls in two days have failed to elicit a single response. Tonight I will be hoping for another thunderstorm, as I only saw the start of yesterday’s before falling asleep. And that Suki stays in hiding until the chicken is safely in the fridge, and doesn’t take a chance on an unscheduled chicken dinner.
