Baked eggs with garlic naan; almond and apricot sponge pudding and ice cream

A quick post because I’m tired and in some pain, and rather looking forward to the peace of my bed.

So: baked eggs, which is a lazy, unspiced version of shakshuka. It’s just the last of the frozen Mediterranean veg cooked in a frying pan with two-thirds of a jar of tomato pasta sauce, then eggs cracked in to cook in the sauce. Mum took all the naan bread, despite me saying it was to share, but kindly gave me a piece to mop up my sauce when I asked.

…and after. It did rise a bit, but not much.

Then a homemade almond and apricot pudding, which was made using a microwave sponge recipe from the internet but with just over half the flour subbed with ground almonds, and a generous amount of apricot jam which started off at the bottom of the bowl but, as you can see, ended up partially on top.

Definitely a bit pancake-shaped.

It didn’t rise much – I got sidetracked and put too much ground almonds in so it ended up a bit heavy and gummy – but it tasted good, and mum thoroughly enjoyed hers (which, if you haven’t gathered by now, has become my main criterion for a satisfactory meal).

And there I’ll leave it for tonight. Tomorrow mum and I are going to a friend’s house for morning tea, which will be the first time I have left the house since I came home before Christmas. I’ll let you know how it goes.

    I keep meaning to try Shaksuka – great idea about the naan too. Have a lovely time tomorrow. How’s your pain at the mo?

    the dessertblooks like ice cream rather than sponge. Unless it is ice cream? Glad mum liked it , always a bonus to get ‘mum approval’ whatever your age😀

      There’s ice cream on top, because most things are improved by the addition of dairy products imo!
