Low fat aubergine parmigiana
I’ll keep this quick as I’m feeling really quite off-colour atm: the quantity and quality of side-effects from two lots of antibiotics are apparently rather more than the sum of their parts.
I’m painfully tired, to the point that I want to cry thinking about all the appointments I have this week: I think it’s a mixture of the antibiotics, the tail end of two infections, and the fact that I have little appetite so I’m running on very reduced fuel.
I spent most of the day reading: I know mum wanted me with her, but I just didn’t have the energy or enthusiasm to leave my bed. This meant I missed an appointment I was meant to go to this afternoon, which I sincerely apologised for but can’t quite feel sorry about.
We have had plentiful Suki snuggles, though, and she’s eating again, so there’s that.
Dinner tonight was a classic aubergine parmigiana, but with the mozzarella replaced by cottage cheese. It’s surprisingly good, but then I’m very partial to cottage cheese anyway.
I ate my portion, then went back for seconds, and now I feel slightly sick. Thankfully I only have two or three more days of antibiotics to go: I’m looking forward to it, and really understand now why boxes of antibiotics are labelled with the instruction not to stop taking them until the end of the course. I must admit I would otherwise be really tempted to do just that.
