Chinese chicken traybake

Another ‘not much to say’ day.

Mum has had an excruciating headache all day: it eased off a little after lunch, but still had mum saying “have I mentioned that my head really hurts?” every few minutes.

Lady Friday came round, and she and mum went out for a brief walk while I finished one of my OpenLearn free courses, about obesity and its causes. I don’t think I learned anything I didn’t already know, but it got my brain back into the pattern of reading, analysing, and remembering.

I have said for some time that I would love to do a Master’s degree one day, and this confirmed to me that my disability and caring role haven’t completely dissolved my brain into mush. Whether it could handle the advanced cognition required for a Master’s degree… Unknown.

And that’s about it, unless you want to know what was in my latest order of reduced price snackage. (Chocolate, mostly.)

For dinner I made a Simply Cook recipe, Chinese chicken traybake. It took much longer than expected to cook, largely because I set the oven at too low a temperature. 🤦‍♂️ Mum’s first bite was accompanied by “oh, this is really good” which, as her head was still really painful, is a definite win.

The next couple of weeks will consist of me sneaking off to watch the Winter Olympics at every opportunity, while mum bemoans the lack of other things to watch.
