Gammon and emmental omelette, green beans and chestnuts in garlic butter, roast potatoes

It’s amazing what mum will eat and enjoy if I just leave it sitting around. A few weeks ago I bought some little pots of chopped mango (like the peach and pear ones you get in hospital, but with mango), and they’ve been sitting in the cupboard ever since.

Today mum discovered them, took one out, and thought it was lovely, despite having always screwed up her nose at the idea of mango before now. Not that I mind, obviously: the more new things I discover that she’ll eat, the better.


Before that, it was another early Sunday start as mum wanted to go to church and yesterday evening asked me repeatedly to assure her that I’d help her get there. As it was, she didn’t need me for anything except giving her her tablets and moral support, and soon she was on her way and the house was almost eerily silent.

With best part of two hours to myself, I read a couple of chapters of my book (something I can’t often do when mum’s around as she interrupts me so often I quickly lose track of what I’m trying to read), then did the washing up from breakfast, emptied the food waste caddy and put the bag out for collection tomorrow, put a new bag in the caddy, did a mealplan for the coming week, and updated the grocery order accordingly.

By the time mum got home I was lying on my bed recovering my energy, and she made a joke about me being lazy. šŸ™„

Dinner this evening was a classic post-Christmas meal: the last of the gammon cooked into an omelette with grated cheese in with the egg mix, and sliced emmental on top. Frozen green beans and vac-packed chestnuts with butter and some jarred garlic. Frozen roast potatoes.

Mum said it was good but couldn’t finish her half of the omelette so put it in the fridge to eat tomorrow. Which she won’t do, as mum never eats leftovers. Some days a good half of my daily food intake is mum’s leftovers, as it’s that or throw them away.

So, after 15 minutes of staring into space trying unsuccessfully to think of a proper conclusion, that’s that. See y’all tomorrow.
