Roast chicken and vegetables; berry crumble and ice cream

I woke up this morning to find mum sitting in the living room eating breakfast, a vast improvement on her condition yesterday. She has still been feeling uncomfortable, though, and the prescribed meds aren’t really helping, so I decided to do some research into food that helps gut function.

One of the main suggestions is pulses – beans and lentils – but mum’s response to that suggestion was a firm “no”. Other suggestions seemed more palatable, such as berries and oats: 💡 – berry crumble!

I’m pleased to say that I have definitely cracked the art of the crumble, as it came out beautifully golden and crunchy on top, sweet (a little too sweet for my taste, tbh) and fruity underneath.

There is considerably less of it now, needless to say.

I made far too much crumble – I used the same recipe as usual, but I think I must have halved it on previous occasions. Ah well, it means I have some frozen for the next time I fancy making a crumble.

Much of the coming week’s menu includes additional fibre, hopefully in forms that mum won’t object to the way she objected to the possibility of eating a lentil. 😬
