Stuffed peppers with garlic bread and salad
Hello, everyone. Sorry for the lack of posts recently, but I’ve had nothing much to say and little to no energy to say it with.
While my energy levels aren’t much better today, I do at least have something to write about: a first appointment with a new GP. (New to me, that is, not new to being a GP.)
My appointment was, by my standards, quite early in the morning. On the plus side, it reduced the number of times I had to listen to mum telling me how ill she felt. On the minus side, an early start is even less fun when you have a chronically fatiguing condition.
The GP was lovely, and I won’t at all hesitate to have further appointments with him, but we did have some interesting exchanges. For example:
πΊ: “I have an undiagnosed genetic condition.”
π¨ββοΈ: “What’s it called?”
πΊ: “Uh… I don’t know. That’s why I said it’s undiagnosed.”
Or:
πΊ: “I’ve been referred to physio several times, but have never heard back from them.”
π¨ββοΈ: “Why not?”
πΊ [bewildered]: “How should I know?”
Anyway, the outcome was that he’s going to refer me to the physio team again, and has asked another member of the practice team to contact them to ask why they haven’t responded to the previous referrals. He has also messaged the Social Prescriber to ask him to contact me to discuss other forms of community support to help me feel less isolated.
By the time I got home, mum was miraculously feeling much better: I’ll have to go out without her more often if it has that effect! This evening I cooked a frozen pizza for dinner, which isn’t very interesting to write or read about, so instead I’ll tell you about the stuffed peppers I made earlier in the week. These were simply halved peppers filled with Mediterranean-style vegetables with giant couscous (from Merchant Gourmet: it comes frozen and is well worth keeping in the freezer for quick meals), topped with a slice of cheddar and baked until bubbly and golden.
Mum gave it a “very nice, thanks” – as she did with tonight’s pizza (sweet chilli chicken pizza, from Iceland), so I’m doing OK with meals this week on the whole.
