Flatbread pizzas and salad
Apologies for not posting yesterday: I ran out of spoons before I ran out of day. Dinner was a “what can I find in the freezer?” special anyway, so I didn’t think you were missing out on anything.
Today was also a bit of a nothing day: mum was getting very anxious about going to church, even though that’s not until next week, so spent much of the day in pain as the anxiety aggravates her physical conditions.
While she alternated dozing and trying to do things only to find they made her back hurt (poor mum ☹), I wrote a bit of my book, potted on a supermarket basil plant that will be much happier in a larger pot, did my weekly meal plan and grocery order combo, and listened as mum played clips of Lewis Capaldi at Glastonbury on repeat. Which is not a complaint: it’s so good to hear him back and singing at his beautiful best.
For dinner I made flatbread pizzas – supermarket flatbreads topped with pizza sauce from a jar and whatever cheese is in the fridge, baked until golden and bubbly – which we ate with the last of the salad. Not exactly inspired, but they took two minutes to make and ten to cook, which is what I want on a hot summer Sunday.
Tomorrow I will have my Job Centre / DWP interview, if they remember this time, and hopefully the delivery of some more compost so I can finish potting up my new plants. In the meantime, here’s a rather lovely day lily (hemerocallis) which has been growing in mum’s garden for many years but that mum swears she’s never seen before. At least it’s a pleasant thing to be repeatedly surprised by.
