Vegetable pad Thai with duck spring rolls
The post title tells you all you need to know about the level of interesting stuff that happened today. Despite sleeping 12 hours last night I’ve felt exhausted, stiff, and generally off-colour all day. Apart from getting myself added to the waiting list for the local Long-Standing Health Condition Support Service which, as the name suggests, specialises in helping people in my situation, and assisting in putting the grocery delivery away, I haven’t really done much by way of… well, anything, really.
Dinner was a kit meal – noodles, sauce, crushed peanuts – from Blue Dragon, to which I added a pack of stirfry veg and an egg from the fridge. It was spicy, but not too spicy, and got two Mum-chelin stars (an unprompted “that was nice”).
To go with it were some duck spring rolls from Iceland: nicely crunchy, with recognisable chunks of duck meat, although I didn’t love the flavour, probably because I don’t like duck much in the first place. Luckily mum is a big fan, and will have the rest of the box for lunch tomorrow before going out for a walk with a friend, during which time I might (or might not) work on the cookbook. What I will do is raid my new box of discounted treats which is due to arrive tomorrow.
On a different note, huge thanks to whoever it was who recommended the chef’s candle: it’s worked wonders at clearing the smell of yesterday’s curry from the kitchen. All I need now is to get some scented candles for my bedroom: I love a smelly candle, and mum has said she doesn’t mind me having them as long as I’m careful, so that’s next on my list of treats for myself, right after a battery-powered can opener. It’s the little things.
